Copperworks American Single Malt Whiskey


Release 001

Tasting notes: Nose of soft honey and black tea aroma, smooth mouth feel, and flavors of smoked orange toffee, giving way to black pepper and leather.

Production details: 100% two-row, pale malted barley; 50% is Great Western Malting’s WA Select Pale Malt and  50% is Great Western Malting’s Northwest Select Pale Malt. Great Western Malting is located in Vancouver, WA. Get detailed production specs.

Release 002

Tasting notes: Aromas of black tea and candied fruit. Flavors of fruit, with orange, apricot, and lemon rind dominating. Later finishes with black pepper and desert sage spices.

Production details: Just like the recipe for Release 001, this release is made of 100% two-row, pale malted barley, with 50% Great Western Malting’s WA Select Pale Malt and 50% being Great Western Malting’s Northwest Select Pale Malt. Get detailed production specs.

Release 003

Tasting notes: Nose of citrus rind, spice, and cantaloupe. Flavor sweet spice, dried plums, toffee, and burnt orange. Long finish with leather, green tea, and mango.

Production details: This is the first release of Copperworks “Five Malt” recipe. It contains 75% pale malt and 25% caramel malts. The beer for this release is modeled after a traditional Scottish Ale. Get detailed production specs.

Release 004

Tasting notes: Nose of mellon rind, spice, and black pepper. Flavor starts with exotic spices, burnt orange and chamomile. Long finish with tropical fruit, especially pineapple and mango. Try with a few drops of water to bring out more dried fruit aromas and flavors.

Release 005

Tasting notes:  Aromas of black tea, baking spices, and ginger bread. Flavors of candied orange, pineapple juice, and slightly briny. Finish of coffee with cream, honey, and grain cereal.

Production details: 100% Pale Malt recipe. Aged for 33 months in six full-sized of New American Oak barrels with a long toast and #3 char. Bottled at 100 proof. Get detailed production specs.

Release 006

Tasting notes:  Nose of dried fruit especially cherry and orange. The flavor has notes of leather, almond paste, and more dried fruit, with a finish of slight walnut and leather notes.

Production details: Five Malt recipe (75% pale malt and 25% caramel malts). The release combines seven barrels of Copperworks whiskey matured in new American Oak with a half cask of whiskey matured in a used Oloroso Sherry cask. Get detailed production specs.

Release 007

Tasting notes: Aromas of pepper, apricots, and dill. Entry offers heat with orange peel and tea flavors. With a few drops of water, heat subsides and stone fruit, mint, and pine finish come forward.

Release 008

Tasting notes: Aromas of pepper, spice cabinet, and BBQ sauce. With water, strawberry aromas evolve. Flavor has substantial caramel giving way to leather, melon and dried fruit with a similar finish, plus long vanilla notes

Release 009: Single Cask Release (Cask No. 43)

Tasting Notes: Aromas of orange, brown sugar, grain, and vanilla. A spicy flavor, with oak, citrus pith, and slight brine. It has a long, lingering finish with dry black tea, oak, and leather.

Production Details: Made for 100% pale malt and matured for 40 months in a full-sized, charred, new American Oak barrel. The 122 bottles in the releases were bottled at natural cask strength of 125 proof. Get detailed production specs.

Release 010

Tasting notes: Aromas of caramel, apricots and orange rind. Entry tangy, with stewed fruit and orange peel flavors. Finishes with tropical fruit, black tea, and white pepper.

Production details:  Made from 100% malted barley, this release combines whiskeys made from two different recipes: our Five Malt and our Pale Malt recipes. It was twice-distilled in our traditional Scottish copper stills and matured for 39 months in full-size, charred new American Oak barrels. Get detailed production specs.

Release 011

Tasting notes: Rich aromas of fresh leather, orange peel, creme brulee, and exotic spices. Flavors follow the aroma with orange sorbet and dark fruits, and finish with dark honey, leather, and dry tea leaf.

Production details: Made from 100% malted barley, this release combines whiskeys made from two different recipes: five barrels made from our Pale Malt recipe and matured for 32 months in full-size, charred new American Oak barrels, and half of a barrel made from our Five Malt recipes and matured for 33 months in a barrel which previously contained Oloroso Sherry. Release 012

Tastings.com named this release “2018 Best American Single Malt Whiskey” with 96 points and Platinum Medal. “Superlative.” Read full review.

Tasting notes: Rich aromas of fresh leather, melon, pineapple, and spices; then follows with flavors of dark fruit, cocoa, and sweet citrus. It finishes with notes of mango, bitter tea, and light citrus.

Production details: Made from 100% malted barley and twice-distilled in Scottish copper stills. The release  combines whiskeys made from two Copperworks recipes: our Five Malt and our Pale Malt recipes. It matured for  more than 33 months in full-size, charred new American Oak barrels (barrels with a very light char). Get detailed production specifications.

Release 013

Production details: The majority of this release (85%) was created from our “Five Malt” recipe and was aged for 33 months in full-size, new American Oak barrels with a lighter char than we used in previous releases (Level 1 char instead of Level 3). The lighter char level lets the malt character in whiskey really shine through. The remaining portion was created from our Pale Malt recipe, aged in Level 3 char, for 30 months. Tasting Notes:  Aromas of suede, cedar, hay, and cinnamon and flavors of baking chocolate, turmeric, and tanned leather. It finishes dry, with notes of coca nibs, Indian spice, and pineapple.

Release 014

Tasting notes: Aromas of fresh dates, caramel, and black tea. Flavors include dark sugar and pineapple. Finishes with orange peel and citrus.

Production details: a single cask release (cask #102) made from our 5-malt recipe. It was matured for more than three years in a full-size, new, American Oak barrel with a medium-light, #2 char. Get detailed production specifications.

Release 015

Tasting notes: Aromas of suede, cedar, and dried fruits. Fruitcake and baking spices in the flavor. Finishes soft and creamy, with creme brulee, flan, and orange zest.

Production details:  a single cask release (cask #115) made from our 5-malt recipe. It was matured for 35 months in a full-size, new, American Oak barrel with a light-medium, #2 char. Get detailed production specifications.

Release 016: Five-Year Anniversary Single Cask Release

Tasting notes: Aromas of apple skins, nutmeg, and sweet cream. Flavors start with dark cherry, then lead to more stewed fruit and figs. Finish is long and dry, with maple, white pepper, and burnt cream.

Production details: Release 016 of Copperworks American Single Malt Whiskey was a distillery-exclusive, single cask release made from our 5-malt recipe. It was matured for 38 months in full-size, new, French Oak barrel with a light, #1 char. This is the first time we’ve released a whiskey fully matured in 100% French Oak. The 5th anniversary is the year of “wood”, so we released this unique cask of French Oak to celebrate. Get detailed production specifications.

Release 017: Amaro Cask Finished

Tasting Notes: This rich whiskey offers aromas of orange, menthol, and peppermint, with flavors of sarsaparilla and cedar, and a bitter orange, mint finish.

Production Details: This release was a collaboration with Lettterpress Distilling, located near Copperworks. Letterpress Distilling aged its Amaro Amorino in two 53-gallon American Oak barrels that we had used to mature Copperworks American Single Malt Whiskey. After aging the amaro, the barrels came back to us. We filled one with matured American Single Malt Whiskey and let it rest for six months to finish maturing. 290 bottles produced.

Release 018

Tasting Notes: Aromas of dried apricots, caramel apples, and baking spices. Flavors include browned butter, fruit cake, and baked apples. It finishes with apricot and pear, sherry notes, and clove.

Production details: 90% of the release came from five casks made from our Five-Malt recipe and matured for more than three years in full-sized, new American Oak barrels with a light (#1) char. The remaining 10% came from two casks made from our Pale Malt recipe whiskey, one finished in an Oloroso Sherry cask and one fully matured in an Oloroso Sherry cask. Release 019: Single Variety Malt Whiskey

Tasting notes: offers slightly smoky, malty, graham cracker, and minty aromas. Flavors include molasses, leather, cream, and kiwi. Finishes with tropical fruit, jasmine flower, leather, and turmeric. 

Production details: a single-cask release (from cask #138) made from 100% Alba Malt. It was matured for 34 months in a full-size, new American Oak barrel with a light (#2) char. Get detailed production specifications.

Release 020: Single Variety Malt Whiskey

Tasting notes: offers romas of cinnamon, suede, apple pie spices, and saw palmetto. Lots of demerara brown sugar, balanced with tobacco, and orange peel in the flavor. Finishes dry and slightly peppery, with floral and browned butter notes.

Production details: a single-cask release (from cask #142) made from 100% Alba Malt. It was matured for 34 months in a full-size new American Oak barrel, with a #3 char, made by Independent Stave Company in Lebanon, Missouri. Get detailed production specifications.

Release 021

Tasting Notes: Aromas of tropical fruits, cinnamon candy, and fresh grain with flavors black pepper, brown sugar, and baked goods and a long spicy finish.

Production Details: Release 021 is our first to use three different malt recipes and the whiskey was blended from nine different barrels: four barrels of Alba Malt, three barrels of Five Malt, and two barrels of Pale Malt. The various recipes were matured in oak for no less than 34 months. Get detailed production specifications.

Release 022

Tasting Notes: Aromas of blackberry honey, sweet tea, and floral notes. Flavors include orange, leather, and lychee and it finishes with tropical fruit, dark sugars, and cedar.

Production Details: Distilled from 100% pale malt and matured for 29 months in new American Oak barrels with a long toast and a #1 char. The whiskey was entered into the barrel at 125 proof and bottled at 102 proof. Get detailed production specifications.

Release 023

Tasting Notes: Aromas of hibiscus, sage, candied orange peel, and raspberry that lead to flavors of apple pie crust, pecans, and sweet cream. The finish brings more baking flavors such as cinnamon roll and baked apples, with a coffee, shiso, and cedar dryness to wrap up the flavors.

Production Details: Release 023 was created by combining five casks of our Pale Malt recipe (matured in new American Oak for 34 months) with one cask of our Five Malt recipe (matured in new American Oak for 29 months). Get detailed production specifications.

Release 024: Imperial Stout Cask Finished

Tasting Notes: the release offers aromas of citrus peel, chocolate truffle, and ice tea, which prepare one for the dark fruit, cocoa, and coffee nudge flavors. It finishes with lychee, exotic spices, coffee, and chocolate tiramisu notes.

Production Details: Release 24 was finished in a cask that previously held Three Magnets Imperial Stout. Three Magnets Brewing Company in Olympia, WA finished a beer in two of our whiskey casks to create Copperworks Tompkins Imperial Stout. We took the barrels back and finished the whiskey in them. The whiskey used our Five Malt recipe and was first matured for 29 months in charred, new American Oak barrels.

Release 029

Tasting Notes:  offers a complex variety of aromas and flavors. The aroma offers elements of green tea, strawberry, orange marmalade and driftwood, leading to flavors of passion fruit, coffee cake, red wine, and apple. The finish is drying, with tea leaves, grape skins, cinnamon sticks, and campfire flavors.

Production Details: Release 029 was created by combining five casks of whiskey distilled from a single variety of local barley with a cask of our Five Malt recipe, plus a smaller amount of whiskey that was aged in a Cognac cask and finished in an Oloroso Sherry cask. The three whiskeys in this release spent different amount of time aging in wood, but all were aged for at least 31 months. Get detailed production specifications.

Release 030

Tasting Notes: offers aromas of toffee and ripe fruit, followed by plum and a pleasant smokiness. Entry flavors of walnut, baking spices, and red tea lead to more fruit (plum and tropical), with a finish of cocoa, papaya, and a slight minty finish.

Production Details: To create Release 030, we started with three casks of whiskey made from our Five Malt recipe that was aged in new American Oak for 37 months. We then blended in a portion of a barrel of whiskey made from our Pale Malt recipe that was first matured in a cognac cask for 27 months and was then transferred to an Oloroso Sherry cask to mature for another 26 months. Release 031

Tasting Notes: offers aromas of browned butter, orange cream, and grapefruit peel followed by ripe blackberry and spice. Flavors of honeydew, cut hay, Thai basil, and melon rind lead to a finish of blackberry, tomato vine, fruit, and a slight, sweet brininess.

Production Details:  this release was created by combining six casks of whiskey distilled from our Five Malt recipe with one cask of whiskey distilled from a Single Variety Malt grown and malted not far from Seattle. All casks were aged for at least 32 months in charred, new American Oak. Get detailed production specs.

Release 032: Single-Cask Release

Tasting Notes: offers aromas of maraschino cherry, orange oil, clove, and wildflowers lead to flavors of Demerara sugar, orange pith, an Old-Fashioned cocktail, coffee cake, and malted milk candy, with a finish including toasted nuts and baking spices

Production Details: Release 032 is a single-cask release distilled from one of our Five Malt recipe (this recipe contains 25% caramelized malts and is similar to the recipe a brewer would use for a Scotch Ale). The release was matured for 41 months in a full-size, new American Oak barrel with a #3 char. It was bottled at its natural cask strength of 59.7% ABV. Get detailed production specifications.

Release 033: Sherry Cask

Tasting Notes: The complex blending and maturation process used for Release 033 produced a whiskey that goes well with cured ham, green olives, and cheese. It offers aromas of almond, fruitcake, rum raisins, and a whiff of linseed oil. The initial flavors of fig conserves, browned butter, and apple skin lead to a long finish of tobacco, citrus rind, balsamic vinegar, and tomato vine.

Production Details: This was our first release to fully capitalize on the flavors of whiskey matured in a sherry cask. We matured two different whiskeys for more than 30 months in a 500-liter fino sherry cask from Spain. The sherry cask contributes characters of almond, butter, fruit skin, and tomato vine to the Copperworks Whiskey. Get detailed production specs.

Release 034: Peated Malt Whiskey

Tasting Notes: This release offers aromas of campfire, roasted tomatoes, and exotic spices. Flavor notes of roasted almonds, toast, and orange zest lead to a long finish of hickory, cedar, and wet earth, ending with pleasant briny and wood notes.

Production Details: This release comes from eight casks of whiskey that were brewed and distilled from 100% of the Copeland variety of barley grown in Washington’s Skagit Valley and smoked during the malting process with Washington peat. The whiskey was matured for just over four years in new American Oak casks. See detailed Production Specifications for this release.

Release 035

Tasting Notes: has a fresh, grassy, and lemon pound cake aroma, with hints of pineapple. Flavors include silky browned butter and more fresh grain. The finish has long notes of sassafras, mint, and fruit leather.

Production Details: This was our first release that used Baronesse Barley, a special barley grown by Joseph’s Grainery and malted by LINC Malt, both in eastern Washington State. Release 035 was created by combining four casks of whiskey distilled from Baronesse Barley with two casks of whiskey distilled from our pale malt recipe. All six casks were aged for at least 39 months in charred, new American Oak. Get detailed production specs.

Release 036: Double Peated

Tasting Notes: Driftwood campfire, leather, and creosote dominate the aromas. A sweet, Demerara sugar entry leads to tastes of candied orange peel and seaweed. The finish is minty, ashy, earthy, and briny, while still sweet and silky.

Production Details: This release started with our Washington Peated Single Malt Whiskey, which was made from locally grown barley malted with peat from a bog in Washington State. That whiskey had matured for 45 months in new American Oak and we finished it for an additional seven months in a cask that previously held Ardbeg whisky. The Copperworks Washington Peated Whiskey brought savory and earthy notes to the release and the Ardbeg cask layered on a more traditional Islay Scotch smokiness. The sweetness from the new American Oak cask balanced the heavy smoke from the Ardbeg cask. Get detailed production specs.

Release 037: Tequila Cask

Tasting Notes: This whiskey offers aromas of menthol, cherry-vanilla, and a small bit of chalk. Red Vines and grapefruit juice dominate the flavor, with sweetgrass emerging through the rich and caramelly whiskey body. The finish ends with more grapefruit and sour apple.

Production Details: This release was a collaboration with our friends at Arette Tequila. This release started as our Five Malt recipe that was matured for 28 months in a new American Oak cask with a #3 char. It was transferred into an Arette Tequila cask to finish for just over 10 months. Get detailed production specs

Release 038

Tasting Notes: Aromas of rum raisin ice cream and pear balsamic give way to flavors of fig conserves and baked pears. Finishes with hazelnuts, fruit leather, and dark cherry candy.

Production Details: Release 038 was created by combining six casks of whiskey distilled from Baronesse Barley with two casks of whiskey distilled from our standard Pale Malt recipe. We then added 5% of the whiskey that was matured in a Manzanilla Sherry cask This is the first time we have used whiskey matured in a Manzanilla Sherry cask in one of our whiskeys. Release 039: Salmon-Safe Certified

Tasting Notes: Aromas of rich, stewed fruit, ripe pear, red wine, and pipe tobacco. Flavor notes of candied citrus peel, melon rind, smoked tea, and cedar lead to a long finish of mango, cinnamon, and walnuts, ending with a slightly briny note.

Production Details: Release 039 is the first whiskey ever to be bottled from Salmon-Safe grains. Salmon-Safe certification represents ecologically sustainable agricultural practices that protect water quality and wildlife habitat. Release 039 was crafted from eight casks of whiskey distilled from the Genie varietal of barley. It was matured in charred new American Oak casks for 36 months. Get detailed production specs.

Release 040: Single Cask WA Peated Malt Whiskey

Tasting Notes: Aromas of chocolate mint, black tea, and lemon custard lead to flavors of honey, cream cheese frosting, butterscotch, and salted caramel. Flavors carry through to the finish, with lingering smoke and a slight earthiness. A great whiskey for the winter months.

Production Details: Release 040 was made from a single cask of whiskey that was brewed and distilled with 100% of the Copeland variety of barley grown in Washington’s Skagit Valley, then smoked with Washington peat. It was matured for just over five years in a lightly charred, new American Oak cask. The whiskey was bottled at its natural cask strength. Get detailed production specs.

Copperworks Kentucky Tornado Relief American Single Malt Whiskey

For each bottle sold, $40 was donated to Team Western Kentucky Tornado Relief Fund. Jason Parker, Co-Founder and President of Copperworks Distilling, grew up in Bowling Green, Kentucky and was there visiting family when tornadoes destroyed part of the town in December 2021. To assist with relief efforts in the area, we crafted this special whiskey release.

To create this special release, we turned to a whiskey that was maturing in a barrel that previously held Kentucky bourbon. To achieve the flavor profile we were after, we blended that cask of whiskey with whiskey that had been matured in a new American Oak cask (cask no. 270, in honor of the area code for western Kentucky). Both barrels held whiskey distilled from our Pale Malt recipe and were aged for a minimum of 45 months.This special benefit release is the first from Copperworks to use whiskey matured in a used bourbon barrel.

Mystery Whiskey 2022

For April Fool’s Day 2022, we created our first “Copperworks Mystery Whiskey” – a release where we did not share any detailed information, unlike our usual releases where we publish detailed specifications. We promised that once the whiskey was sold out, we’d release information on how it was made. The release was a combination of seven different whiskeys:
 
• WA Select Pale Sherry finished – .32 gal @ 107.1 proof
• Release 002 – 1.46 gal @ 106.2 proof
• New Make Peated Copeland – 9 gal @ 119.8 proof
• New Make WA Select Pale – 8.65 @ 125 proof
• WA Select Pale small cask finished – 9.7 gal @ 115.54 proof
• WA Select Pale small cask finished – .5 gal @ 115.54 proof
• Fritz Pale New Make – 18.26 gal @ 135.4 proof
 
All seven of the whiskeys were entered into a used Copperworks Whiskey cask in January of 2017 and matured for  over five years. The whiskey was bottled at its natural cask strength of 63.5%. Get detailed Production Specifications.
 
Tasting Notes: Fruity, peppery, and musky barrel aromas give way to, what is that? Wine and passion fruit? What a mysterious aroma! The flavors are unlike anything we’ve released so far, yet strangely familiar, with orange rind, more passion fruit, and umami, almost like a full meal–of whiskey! The finish is long, unctuous, and warm with honey, raisins, toasted marshmallow, and caramel apples. Truly a mystery, and impossible to repeat.

Release 041

Crafted from nine casks of whiskey, Release 041 is our most involved blend to date and the one that best illustrates our pledge to always put flavor at the front and center of our production process. Although other Copperworks releases have been created by combining different cask types, barley varietals, and maturation times, Release 041 was created with a wide array of whiskeys. Tasting Notes: Aromas of ripe cantaloupe, tobacco, glazed ham, and banana custard lead to flavors of fig jam, dark cherry, and a back-note of Worcestershire sauce. Finishes with lots of tropical fruit, including pineapple, mango, and papaya. 

Release 042: WA Peated American Single Malt Whiskey

Release 042 was created from six casks of Washington State peated whiskey that were matured for more than five years. Each cask was brewed and distilled with 100% of the Copeland variety of barley that was grown in Washington’s Skagit Valley and then smoked during the malting process with peat from a lakebed on the Olympic Peninsula. Tasting Notes: Aromas present notes of vanilla bean paste, ripe passion fruit, and pineapple, enhanced by a subtle smokiness. The barrel influence shines through first in the flavor notes with an early entry of candied almonds and salted caramel, later developing into a complex of oak and tannins. The finish brings notes of pine sap, bread crust, and white pepper that trail into a fig jam and fruit leather. 

Release 043: Peated Cask

Release 043 was crafted from a pale malt whiskey that matured for three years in a charred new American Oak barrel before being transferred to an Ardbeg Scotch Whisky cask for one year.  

While this release only gets its smoky flavor from the cask (not the barley used to brew it), it does have a much heavier smoke flavor than Release 042. While our Washington Peated Whiskey has more savory and earthy notes, this release has more of the traditional smokiness you would find in an Islay Scotch. Ardbeg uses some of the highest levels of peat smoke in the Scotch whisky industry, so the flavor really shines through. However, there is a distinct sweetness that comes from the primary maturation which balances the heavy smoke from the Ardbeg cask. Get detailed production specs.

Craft Malt Week 2022 Single Cask Release

This special single cask release was created to celebrate Craft Malt Week 2022. It features Baronesse barley grown by Joseph’s Grainery in Colfax, WA and malted by LINC Malt in Spokane Valley, WA. The release matured for 30 months in a charred new American Oak cask with char level two and 36-month aged staves. Limited release of 219 bottles. Get detailed production specs.

Tasting Notes: Aromas of pine needles, apple pie crust, fresh flower petals, and wet cedar immediately identify this whiskey as something special. The apple pie crust aromas continue into the flavor, moving through steel-cut oats to darker notes of black walnut and cola nut. A nice, long finish of oiled teak, candied pineapple, and suede wrap up this complex whiskey.

Release 044

Tasting Notes: Aromas of lemon zest and black cherry to start, with suede, dried pine needles, and grilled pineapple following. The first sip reminds of sweet tea, then the fruit continues with flavors of ripe kiwi and citrus peel, lingering as an aged pipe tobacco. Finishes with a bang of white pepper, Demerara sugar, and fresh raspberries. A well-balanced sipper, and a great candidate for an Old Fashioned.

Production Notes: Made with eight casks, all matured in charred, new American Oak. Four casks were brewed from Great Western Malting Pale Malt and matured for 45-52 months. Three casks were brewed from single variety barley (Baronesse barley grown in Colfax, WA) and matured for 56 months. The final cask was created from a “Queen’s Run” and matured for 60 months. Special Benefit Release: Kentucky Flood & Hurricane Ian Relief

For every bottle sold, $40 was donated to relief efforts.

The whiskey for these two special benefit releases came from whiskey matured in two casks that previously held bourbon and from one new American Oak cask. Whiskey from one of the bourbon casks was made from pale malt and matured for more than five and half years. Whiskey from the other bourbon cask was crafted from a rare single varietal malted barley called “Alba” and matured for six and half years. Whiskey from the new American Oak cask was made from pale malt and matured for nearly four years. Get detailed production specifications for this release.

Tasting Notes:  Opens with aromas of orange zest, sweet tea, apple pie, and cereal. Apple pie continues as a dominate flavor, along with peach and sponge cake. This delightful combination finishes with a little almond paste, raisin, and even more peach notes, making this a very delicious southern-flavor focused whiskey.

Rum Single Cask

Tasting Notes: Colored like a freshly bloomed tiger lily, this whiskey presents florality and grassiness on the nose, though hints of tiramisu, sugarcane, mint, and almond are also remarkable. The rum cask finish is undeniable on the palate with bright flavors of Hawaiian bread, papaya, ginger, and milk chocolate molasses puffs. The Jamaican rum cask is again evident on the lingering finish, with orgeat and falernum making appearances, too. This dram would serve you well in eggnog over the holidays, or straight up any time of year.

Production Notes: Prior to finishing for nearly eight months in a Jamaican rum cask, this whiskey made from pale malt completed its primary aging in two new American Oak casks. Both casks from Kelvin Cooperage were air-seasoned for a year and a half. One cask was char #2 and matured for four years, while the other cask was char #3 and matured for three years and nine months. 50% ABV. 289 bottles produced.

Moscatel Single Cask

Tasting Notes: If the pearlescent deep orange color and long legs left on the glass don’t grab your attention, the nose and what follows certainly will. The Moscatel finish is evident at nosing: stone fruit, pie crust, creamsicle, and a subtle florality. All of this follows onto the palate, balancing sweet and tart with the addition of white pepper and honeysuckle. Finishing long, with citrus, white pepper, and florality taking center stage. Drink neat or throw it into a classic Manhattan for a fun twist.

Production Notes: Crafted from pale malt that matured for 3 years and 8 months in two new American Oak casks. The casks were produced by Kelvin Cooperage with a #3 char. The whiskey was then transferred to the Moscatel cask and finished for 11 months. Get detailed production specs.

Release 045

Tasting Notes: Lots of classic single malt whiskey aromas here, including heather, cigar wrapper, and a bit of brisket char. A big clover honey entry followed by more heather, poached pear, and a nice shot of mocha. Finishes with more honey, moving to graham cracker, and trailing off with ripe fig.

Production Notes: Crafted from six casks of single variety malt whiskey brewed and distilled from the Fritz variety of barley that was grown on a single farm in the Skagit Valley and matured for 36 months in charred new American Oak casks. Those casks make up 94% of this bottling, while the remaining 6% comes from whiskey that matured for 60 months in a Manzanilla sherry cask. 50% ABV. 1,681 bottles produced. Hair of the Dog Brewing Cask Finished Collection

About the collection: In early 2022, legendary Portland brewery Hair of the Dog Brewing Company announced its closure after nearly 30 years in business. Hair of the Dog was known for creative, richly flavored brews and was barrel aging beer way before it was cool. This was our first (and likely last) chance to acquire casks from this craft beer pioneer. Considering our own origins as brewers, we knew we couldn’t miss out on the opportunity.

This collection features two single cask American Single Malt whiskeys and two cask finished gins. Each product was finished in a cask previously used by Hair of the Dog, resulting in unique flavors that represent the endless possibilities when craft brewing meets craft distilling.

The two American Single Malt whiskeys in this collection share the same beginning. Both were crafted from a single variety of barley called Genie, grown on a single farm in Athena, Oregon. They matured for 3 years and 3 months in new American Oak casks from Canton Cooperage with char #2 and 36-month seasoned staves. Then, their journeys diverged as they entered casks previously used by Hair of the Dog.

  • “Matt” American Single Malt Whiskey 
    • Tasting Notes: Maraschino cherry, plum, raisin, and chocolate malt balls are the main feature on the nose, with later appearances of citrus and milk chocolate. Warming on the palate, these notes remain present yet drip with vanilla and caramel. The finish is luscious with oak, spice, and some citrus joining the party.
    • Production Notes: Finished for 8 months in a Hair of the Dog “Matt” cask, a bourbon cask that previously held Hair of the Dog’s Matt American Strong ale. 50% ABV. 179 bottles produced.
  • “Adam” American Single Malt Whiskey
    • Tasting Notes: A summer’s day greets you on the nose with bright citrus, confectioners’ sugar, pine, and strawberry. This lends an effervescent quality to the palate with more citrus and cinnamon, accompanied by a malty sweetness with spice and chocolate lava cake dancing around the edges. Finishing bright and long with spice, vanilla, candied orange peel and apple tart making an appearance.
    • Production Notes: Finished for 8 months in a Hair of the Dog “Adam” cask, a bourbon cask that previously held Hair of the Dog’s Adam ale. 50% ABV. 253 bottles produced.

Release 046: Salmon-Safe Certified

Tasting Notes: On the nose, lemon zest greets you alongside a slight effervescence, followed by oak, subtle florals, and a waft of straw and minerality. Mouthwatering on the palate, with notes of candied citrus peel, sugared ruby red grapefruit, rose water, and chocolate raspberries, with minerality continuing from the nose. Oak presents itself gently at first, ramping up with each sip. Canned fruit salad, lemongrass, and roasted coffee linger on the finish, held together with the lemon zest experienced on the nose.

Production Notes: Crafted from a single varietal barley called Genie, from a single farm in Athena, Oregon. Eight new American Oak casks were used, with char #2 and staves that had been open air-seasoned for a minimum of two years. Six of the casks were from the 2018 barley harvest and matured for three years, while the remaining two casks were from the 2017 harvest and matured for three years and seven months. All of the barley grown adhered to growing practices that qualify it as certified Salmon-Safe. 50% ABV. 2,033 bottles produced. Get detailed production specs.

Salmon-Safe: This was our second Salmon-Safe certified whiskey release. Salmon-Safe is one of the nation’s top ecolabels, leading the movement to implement farming practices and developments that protect water quality, maintain watershed health, and restore fish and wildlife habitat.

Single Cask No. 7-2

Tasting Notes: Reflective and colored like yellow citrine, this whiskey has as many facets as one might find in the gemstone by that name. Springtime lemon tree, orange blossom honey, caramelized peach and honeysuckle on the nose. The palate rewards with subtle spice, stone fruit, dried apricot, peach, and a mix of limoncello and dark brown sugar. Finishing long and lightly drying, notes of lemon zest, candied pecan and honey sweetness mingle with black tea. Enjoy this single cask on its own or make it a refreshing summer tipple with a twist of lemon and splash of club soda.

Production Notes: Crafted from our Five Malt recipe and matured in a refilled American Oak cask for six years and ten months, then bottled at cask strength. This cask previously held another Copperworks American Single Malt Whiskey crafted from pale malt. 65.6% ABV. Limited release of 192 bottles. Get detailed production specs.

Single Cask No. 410

Tasting Notes: Sanguine copper in color, with surprises and delights throughout. Cherry cobbler, palm sugar, burnt orange oil and subtle florals on the nose are followed by orange marmalade, black cherry, tart candied orange peel, and cake batter on the palate. The finish pulls up a chair to relax a while with a malty presence, notes of dried dates, yucca, and a heap of baking and wood spice.

Production Notes: Crafted from a single varietal pale malt called Fritz. Matured in a new American oak cask for just over 3 years. This cask was char #2 with 24-month seasoned staves. 60.35% ABV. Limited release of 211 bottles. Get detailed production specs.

Single Cask No. 442: Craft Malt Week 2023

Tasting Notes: Tangerine, damp pine forest, custard and a familiar chewy lingonberry candy on the nose. Sweet orange, matcha, vanilla, oak, butter mints, and bubblegum are harmonious on the palate. The finish is long and sweet with the butter mints fading into wintergreen and rounding out with a touch of grass and red berry jam on toast.

Production Notes: Crafted from a barley varietal called Genie grown in Reardan, Washington by Coulee Hite Enterprises. The barley was malted less than an hour away in Spokane Valley, Washington by LINC Malt, a Craft Maltsters Guild member malthouse. The rest of the process (brewing, fermentation, distillation, and maturation) took place in Seattle. This new American Oak cask matured for just over three years before being bottled at cask strength. 60.3% ABV. Limited release of 210 bottles.
